Rellenong Manok

Rellenong Manok Ingredients:

1 whole chicken, deboned with shape kept
2 tablespoons calamansi juice
2 tablespoons soy sauce
1 1/2 tablespoons sugar

Stuffing
1/2 kilo ground pork
1/2 cup bacon, diced
1 cup ham, diced
1 can Vienna sausage, drained and sliced
1/4 cup sweet green peas
1/4 cup carrots, minced
1/4 cup breadcrumbs
1/4 cup pickle relish
1/4 cup raisins
1/2 cup cheddar cheese, grated
5 whole eggs, beaten
1/2 cup butter
2 tablespoons soy sauce
1 tablespoon sugar
Salt and pepper to taste

Rellenong Manok Cooking Instructions:

*Marinate chicken in calamansi juice, soy sauce and sugar.
*In a bowl, mix all stuffing ingredients well.
*Stuff the chicken in all parts.
*Sew the cavity opening and truss the chicken.
*Wrap chicken in aluminium foil.
*Heat oven at 350 degrees Fahrenheit and bake breast-up for an hour or until chicken is cooked.
*Open the foil an rub chicken with butter and put back in oven until golden brown.

West Adventure

I had an adventurous week....come on have a tour with me! Ready?

First stop: Salt Flatts in Salt Lake City, Utah. Last time we were here there was water and I thought it was a lake. Apparently it was a Flatts covered with salt, and when it rain the flatts floods and it covered with a few inches of water. After awhile the water evaporates and leaves behind the WOrld famous Bonneville Salt Flatts! This is where they test race cars and many land speed records were set here!!

Second Stop: Reno, Nevada. I always wanted to go to downtown Reno at night, and the opportunity finally came however we could not stay long coz it was night and many weirdos coming out lol. All I wanted was to take a picture of the Reno Arch Sign at night coz there are so many lights and look so cool. I still don't get the sign though, "The Biggest Little City In The World" . What is that suppose to mean ? my lil mind is confused hehehehe just kidding!!!

Third Stop: Mt. Rose Summit. Oh my gosh the road coming up here was scary.... it's very curvy and right the edge by the mountain.... kumbaga pampang hehehe if you were driving and your looking down it seems you were flying. I started to have motion sickness... thankfully we arrived at the summit safe and sound! nalipong lang ko gamay hehehe. We were 9,000 ft. above sea level but the top of Mountain Rose is more than 10,000 ft. above sea level. We started to climb on the trail but it was 2.6 miles walk, we didn't even make it to the top of the mountain hahaha we got winded so easily coz we are not in shape, and the air was thinner coz we were in a high elevation. This place is good for hikers!!!

Fourth Stop: Lake Tahoe, in the side of Nevada. It's just beautiful as I imagine in Summer time. When we were first came here, it was winter. It was Magical, very enchantingly beautiful. But on summer its more green around, and the water was sparkling, very clear blue... Breathtaking!!!!! This is my favorite place in the world!!!!!!

Fifth stop: Mono lake in California : First time we came here was winter so this whole place was covered with snow, it looks like winter wonderland. We were on top of the hill, overlooking the Mono Lake....

Sixth stop: Sierra Nevada Mountains, this place was surrounded with bald mountains... and many cattle grazing on the meadows. Wheres the cowboys at?

Seventh stop: Mount Whitney the tallest mountain in the US.

White Sands National Monument

It's been an interesting day today!. We spent the whole day in White Sands National Monument in New Mexico. It was blazingly hot, we got sunburn. Other than that we had a lot of fun, taking pictures and videos, walking on the sand, although it was blazing, surprisingly the sand was cool.... because it was white and doesn't absorbed the heat! It was like in Dubai Desert, only the sand was white. The sand so white it looks a lot like snow, the temperature that day was well over a 100 degrees plus the sunlight reflecting off the sand! yeah you can imagine, I started to see mirages!!!!!! There some picnic areas in the middle of the Sand Dunes, people are having barbecues, family gatherings, children were having fun sliding down on the slope. Anywho, here are my photos, hope you like it!!! Enjoy!!!!

Ginataang Kalabasa

I missed eating filipino foods, so I make Ginataang Kalabasa... if you dont know how to make it, just follow the instructions below.

Ginataang Kalabasa Ingredients:

*1 kilo squash, cut into cubes (1"x1")
*1/4 kilo shrimp, shelled and deveined
*3 pieces tomatoes, diced
*2 onions, chopped
*1 head garlic, minced
*2 tablespoons of ginger root, crushed and minced
*4 tablespoons of cooking or olive oil
*2 pieces long chilli peppers
*2 tablespoons of shrimp paste (bagoong)
*2 cups coconut milk
*1 cups coconut cream (katang gata)
*2 cups chicken stock
*2 tablespoons of fish sauce (patis)

Ginataang Kalabasa Cooking Instructions:

*On a big pan, heal oil. Sauté garlic, onions until light brown then add ginger, cook until onions become translucent.
*Add the tomatoes, squash, chicken stock, shrimp paste and the coconut milk. Let boil then simmer for 10 to 15 minutes or until the liquid has reduced and the squash becomes tender.
*Add the coconut cream, long chilli peppers and the shrimps. Bring again to a boil and simmer for a few more minutes.
*Serve hot with plain rice.

Ginataang Kalabasa Cooking Tip:

*This ginataan recipe can be used on any vegetable, combination of vegetables, fish or meat.

Oh the spring is here and everywhere are blooming, the trees, wild flowers... and it is so beautiful. We are in Seattle, Washington right now and its raining.. There are a lot of mountains here and forest and they look so beautiful. The wildflowers are everywhere, the colors are vibrant. It so relaxing! Anyway I cant help myself but take some pictures of this beautiful views. Hope you like it!!!

I was so glad that we went thru NYC, this is not my first time here. We passed here many times but we were always in a hurry, this time we were just one block away from the Liberty State Park. I was ecstatic coz its an opportunity to see the City and the Statue of Liberty. Keith and I walk to the park it was kinda long walk, and the weather was horrible. It was about 40 degrees, and the wind was blowing hard it feel colder. There were a lot of geese's, I asked my hubby to take me a picture while the geese's are over my head so I went chased them. The wind blow harder it stung on our faces but we still keep walking till we get to the end of the park. The City view was lovely, the Statue of Liberty was on her back so can't really see her face. We had no time to go to Ellis Island, maybe we will go next time.

Looking for Toto

It was late at night , I was cleaning the kitchen when my hubby said "sweetheart Toto didn't came back" he let him go outside to do his thing but its been several hours he never stayed out that long! I was thingking that he was playing with his BFFN (best friend for now) he is our next door neighboor dog, they tied him up and Toto visits him everytime his out to play with him. We went outside calling his name but he didn't come, we started to get worried coz there was a new dog in our neighborhood were afraid that this new dog might have attacked him somewhere. The quietness was so deafining, we called Toto's name but the only answers we got are our neighboors dog bark. my hubby think somethng was wrong, I tried not to panicked I told him to look around. He turn the truck on coz Toto might hear it and maybe he will come running....still he didn't show up so my hubby drive thru the neighborhood. I stayed infront of our house..... the night did'nt feel right, it was really cold, the wind was blowing the leaves it was spooky night! minutes later my hubb came back there was still no sign of Toto. I remember that he tried to cross the lake once at our back before when it was frozen he jump right on it but the ice broke he almost drown, we went to the lake, it was really dark worst we had no flash light. We look there, Thank God he wasn't there or we didn't see any white thing floating. I was getting so frustrated I told my husband to go look around again in the neighborhood, we went looking we didn't find anything..... my husband was thinking the worst could happened to him that didnt help coz I tried not to get so worried...... we went looking for Hours still didnt find him. We thought that we lost him... no more Toto, it was the worst feeling to lose somebody you love so much. We prayed in silent , I told my hubby to go to the neighborhood where I take him for a walked. There was a wooded area, it was dark, lots of leaves..........then I saw a white thing moving!!!!!!!!!!!!! i told my hubby to stop............. it came closer and closer...... it was Toto!!!!!!!!!! Oh gosh what a relief my hubby jump right off the truck to get him....... he was wagging his tail when he saw my hubby......... he was soo happy to see us...i think he got lost!!!! when he hear the truck he follow where it came from. He had no idea how worried we are..... We thank God that nothing happened to him..... we were not going to let him go roaming around anymore..... he is gonna be on a leash all the time..

Rice with Veggies

My Dinner everynight
This is my recipe, I called this “rice with veggies” this is really simple to make.
Ingredients:
1/3 cup of cook rice
½ cup broccoli
½ cup sliced carrots
1 grilled chicken breast
Pinch of salt

Procedure.
Heat the skillet, spray it with spray butter with no calories, then put in the broccoli and carrots. When the veggies are cook, put in the sliced grilled chicken and the rice. Stir it, cook it for 3 minutes. This is very simple and healthy recipe with atleast 330 or 360calories for the whole meal. Enjoy!!!!

A Glass Half Full

Do you sometimes hate yourself? Do you think of what you had said and then you started t0 realize.. "hey, that was wrong!!". Then you start to think really hard about yourself, and you end up wondering "whats wrong with me?" Yeah, I've been thru this.... I started hating myself when my mind was full of negative thoughts . I am not happy being like that ! I want to be content with my life, to be happy and have a positive view of life in general . Stress is a big part of it too, since I travel a lot. But I have to fight it because I know in my heart it's not me. Sean Hannity once said that we should stop and try to smell the roses around us. I often worry about the future, about what's gonna happen tomorrow. Too often we get so wrapped up with the future that we don't pay attention to today. When you're always worried you stop being yourself and become way to pessimistic. It's no way to live your life!!

It took awhile, but I finally realized that no matter how much we prepare for or worry about the future, we really don't know what will actually happen. Life is full of surprises...., I'm thankful for today, for being healthy, that my family are healthy and happy, and that I'm still alive!!! Like the song says, "Live like you were dying!". It's part of growing up!!

I tried to discipline myself, to think positive, and just be thankful that we are still breathing every morning! I still have bad days every now and then, but now I know better. I just take a few deep breaths and face it with positive attitude, then I end up a better and happy person. I don't have much of a social life here, but I am a very social person. I love to interact with another human beings (and cute and cuddly animals lol!!!), but since I can't do that right now because I travel all the time, I still try to be positive and enjoy the views of all the places we visited!!! It makes me appreciate all that God has created......

When our kitchen was severely damage, I was devastated but the part of me say "hey it was fine were gonna have a new one". I was not sure coz the insurance might not cover it, well since they did I was really happy. That kitchen was not very nice anyway. The contractors worked on it for few months, at that time I was planning what to paint, fixtures, and stuff. I've been searching on the internet, watching Hgtv and DIYnetwork. It gives me an idea of what to do. It helped a lot, I learned how to install tiles, to design, arrangements...

Well here are the sample of what I did to my house..... this are not quite finished yet. we still need to paint the kitchen, and the living room.

This was our kitchen look like after the disaster, the contractors, just starting to rip the damages out.

After the renovation, I did the installing tiles and my hubby install the chandelier hehehe.

Okay, I really dislike this part right here, coz its a walk-in or something,.... I watched hgtv they feature a place that look exactly like ours. It gives me an idea hehehehe.... this is the result.

I rearranged our living room, before the TV was at the corner....now its in the middle lol. I like to move everything around!!!!

Just Singing

One of my favorite past time is "singing" although the music doesn't like me very much, I still do love singing. When I am alone, or in the shower I sing my heart out hahaha! my husband sometimes get so irritated but oh well he can't stop me!!

I will admit that since I was teenager, I didn't really like myself that much. Okay as I can remember in my adolescent years, I had a lot of pimples and I always squeeze them coz they are so annoying and so gross. Lil did I know that it will leave scars on my face, well the good thing was they were not that big. It was tiny but still noticeable. My skin was also rough (haggard skin hahaha) since I couldn't afford lotion back then so it was dry and rough, so flicky that I can write on my arm using my fingernail (yeah that bad). I had hair on my face also although it's not thick or long but still noticeable if you really look at it. I was thinking to shave it but I manage not to coz they said it will grow twice as long and twice as thick (oh sweet nibletes! I dont wanna look like a man). The mirror was not my friend back then, the mirror hates me (pout)!!!!. Here in US I found a lot of beauty products that can solved my problem. Since I came here the mirror started to like me, (its not that I am bragging ) since I keep using those products, I'm expecting results hahaha.... Im far from flawless coz I had many scars on my legs and on my body. I'm still looking of what product that will get rid of these ugly scars. When I was just a wee child I had bad allergies, I think I scratch them too much (ouch!). Then there was an accident that my mother gave me a very hot milk, suddenly the hot milk spelled on my body, (I can't remember the pain though) but it did leave a scar. Okay enough with gross stuff. I'm glad that I only have like one or two pimples once in a while and I will not dare to squeeze it, coz my face is already ruined because of my ignorance back then. I would like to share the product I used and what I did to get rid of those ugly pimples and unwanted hair!!!

1. In the morning I washed my face with Clean and Clear Daily Pore Cleanser. This removes excess dirt, oil and dead skin cells that can block pores and lead to breakouts. After I washed my face with these my face feel smooth and radiant, It feels really clean.

2. In the evening I used Clean & Clear Deep Cleaning Astringent. It helps prevent pimples, after I used these my face feel tingly, its very strong astringet.

3. After I clean my face with astringent, I apply moisturizer then I leave it overnight!.

4. For my Facial hair; I used Sally Hansen its a Creme Hair Remover. I apply this once a week, I just apply the creme on my face then leave it for 3 or 5minutes, then I remove it with moist tissue and voila! I am hair free!!!!!!!

5. Once a week I apply Cream Masque, this is a deep cleansing and it allows only to use it once a week. I look scary every time I apply this on my face my husband make fun of me loL!

6. For body Scrubbing I used Village Natural Spa, it is a Sugar mix with Olive Oil and etc. They used this on a salon or Spa but since I can't afford to go to spa, I just used this product. It exfoliate your skin, it will remove dead skins, and it will make ur dark spots a lil lighter..... After I used this I smell like sugar, smell so sweet, and my body is sooo oily coz they put lots of oil on it!. I apply this on a loofah then scrub it on my body... it does hurt if I scrub really hard.

7. I used Shea Butter lotion, made with a brazilian nut and a real shea butter. This will moisturize your body and soften dry, rough skin. Every time I apply this I craved a coffee cake, coz smells like one. So after I scrub with sugars then apply a shea butter lotion that smells like a coffee cake. 8. at last for my Feet. I used Spa foot Pumice Creme. Gently polishes away dryness for blissfully smooth, baby soft feet. yeah i need this coz I have callouses sometimes hahaha since I walked using sleeper only no socks.

As the Bible says, We know that in all things, God works for good of those who love him, who have been called according to his purpose. If you really want to understand why a loving God allows suffering, it might help if you understood why God created us in the first place.

We must remember that Gods plan a lot more complicated than we can imagine. Consider the following. We have a finite mind limited to four dimensions. Fully understanding the mind of God is impossible for us. Evil is not the same as suffering. Evil always has its origin in an intent to do wrong or harm. However, suffering can be caused for good reasons. For example, people often choose the pain of surgery and recovery in order to have a better-functioning body later . And suffering for Christ brings eternal rewards even though evil may be the cause of the suffering. God's intentions are much greater than ours. Its difficult for human beings to look beyond their immediate circumstances. But God always considers the eternal perspective (for example , sometimes our suffering can bring other people to eternal life). God is perfectly holy, loving and just. To our limited human minds, these attributes often seem to conflict with one another.

A God who created the universe could certainly have created a world without suffering. But the reasons why he did not and why the existence of our kind of world makes perfect sense have already been explored. However, some people may think that God is evil and unfeeling because he "sits up there in a perfect paradise" while we are suffering "down here." This is from the truth. God came to Earth in person of Jesus Christ and went through all the types of suffering that most people go through until about A.D.33. At that time Jesus voluntarily exposed himself to the most painful, horrible, and humiliating death ever advised by man: Crucifixion. Whenever we doubt God's existence whenever we wonder whether any God worth the name would create a world he knew would be overwhelmed by pain and suffering, and death - we should remember that he chose to enter this world to suffer more than anyone, and to die in the most painful manner, just to allow us to choose to have eternal life with him in heaven. Jesus did'nt have to do this. He chose this horrible sacrifice for people who didn't deserve it. He chose it to demonstrate his great love.

God so loved the world that he gave his one and

only Son, that whoever believes in him shall not

perish but have eternal life. For God did not send

his Son into the world to condemn the world, but

to save the world through him.

When we reject, or simply do not accept, Jesus as our Lord and Savior, we are in effect thumbing our nose at God saying in essence that the blood of Jesus is not "good enough".
